In a Mexican “Molcajete”, recipe for 6 people

∙ 3-4 ripe avocados
∙ 1-2 chilies (jalapeño, depending on your capacity for heat)
∙ 1 tomato
∙ 1 onion
∙ 1 lime (zests and juice)
∙ olive oil
∙ fresh cilantro
∙ salt and pepper
∙ totopos or nachos chips
∙ Dr. Sours Bitter #9 (‘3 Chiles’)


Cut the avocados in half, remove the pits and carefully spoon the avocado into a bowl. Add a drizzle of olive oil. Slice the lime in half and squeeze the juice over the avocados. Dice the onions, chilies and tomato. Use the pestle to carefully mix into the avocado without crushing the diced onions. Repeat this process until the aromas are well combined. Chop the coriander (cilantro) including the stems and massage into the guacamole. Add a couple of dashes of Dr. Sours Bitters #9 or more if you want it hotter. Now all you have to do is add some salt and pepper to taste and your authentic Mexican guacamole is ready!
